Flat cooking surface. Unlike a pan with curved sides, a griddle has a broad, flat top that spreads heat evenly across its whole surface. This makes it perfect for cooking many things at the same time.
Built or movable. Griddles can be a standalone metal pan you put on your stove, a flat cooking surface built right into your kitchen range, or a whole compact machine with its own heating system and controls.
Breakfast favorite. Griddles are especially great for making pancakes, French toast, and bacon because the flat surface cooks everything evenly without hot spots or burnt edges.
Called different names. In the United States it's called a griddle, but in the UK and some other places, people call it a girdle instead.
Restaurant workhorse. Professional kitchens and diners use large griddles to cook food quickly for many customers all at once.
